Dear Ten-Year-Old Self,
Before you ask me when you have your first kiss or if you’ll ever have a boyfriend, I need to tell you some more important stuff first. What’s more important than a first kiss, you ask? Plenty. First of all, don’t let that kid in your class, Danny, who called you fat, make you self-consciously wear oversized sweatshirts for the next four years to hide your body. That kid is horrible and years from now he will be boring and bald and trying to get in touch with you to come to the set of the TV show you work on. No, you don’t work on “Cheers”. That show’s not on the air anymore. That would’ve been awesome, though. Another thing: Say thank you, always. Gratitude is the closest thing to beauty manifested in an emotion. When you’re grateful, people are attracted to you. Also: Make sure you appreciate Mom and Dad. Yes, they never seem to let you do anything now except read books. Once you turn 18 you’ll never get to live with them again, and you’ll live far away, and you will miss them so much it hurts. Next: Learn forgiveness and bestow it generously. Finally: Don’t let anyone give you any crap. Mastering a balance of these last two will take you a lifetime, so you had better get started now. (x) - Mindy Kaling

Ingredients
- Spiced Quinoa:
- Avocados (1 small avocado per person)
- ½ cup quinoa
- 1 can black beans (rinsed)
- ½ chopped red pepper
- ½ cup corn
- ½ chopped red onion
- ¼ cup chopped cilantro + some for garnish
- 1 tbsp taco seasoning
- Cilantro ‘sour cream’
- 1 cup cashews soaked for at least two hours
- 2 tbsp cilantro
- 1 tsp apple cider vinegar
- 1 tsp agave (if you want it sweeter)
- dash of salt
Instructions
- Start by rinsing your quinoa well and then place it in a sauce pan and toast for about two minutes until the quinoa starts to smell ‘toasty.’ Add one cup of water or vegetable broth and bring to boil. Once boiling, reduce heat to simmer and cover. (To get fluffy quinoa, it’s really important to not stir it, just let it be, keeping a close eye on it)
- Chop the red onion and red pepper and add all the ingredients, minus the quinoa, in a bowl and mix well with the taco seasoning. Once the quinoa is finished and has cooled, add it to the vegetable mixture.
- Put the mixture in the refrigerator to cool.
- Drain the cashews and place them in a blender. Add ¼ cup water, apple cider vinegar, agave, and salt and blend. You may want to add more water until the mixture is silky and smooth but I recommend doing so a little at a time. Once the consistency you want, pour into a bowl and place in the refrigerator to cool
- To assemble the avocados, begin by cutting them in half, removing the skin and the pit. I also scooped out part of the avocado to make a little room for more stuffing.
- Scoop about ½ a cup of the quinoa mixture into each avocado, more if you can fit it.
- Finish with a little cilantro ‘sour cream’ and some chopped cilantro and serve.
- Enjoy!

Quinoa Pizza Bites
Makes ~40 bites
- 2 cups cooked quinoa
- 2 large eggs
- 1 cup chopped onion
- 1 cup shredded mozzarella cheese
- 2 tsp minced garlic
- 1/2 cup fresh basil, chopped
- 1 cup chopped pepperoni slices (~1/2 of a 7 oz bag)
- 1/2 tsp seasoning salt
- 1 tsp paprika
- 1 tsp dried crushed oregano
- pizza sauce for dipping
1. Preheat oven to 350 degrees.2. Mix together all ingredients, except pizza sauce, in a medium mixing bowl.3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), and press down gently to compact.4.
